16 okra, stems removed

½ cup (15 g) fresh basil leaves
⅕ cup (5 g) fresh mint leaves
½ clove garlic
10 g Parmesan cheese, grated

Preheat the pot over medium heat for about 2 minutes. Add olive oil and spread it evenly. Once the oil starts to smoke, place okra in the pot, and sprinkle with salt. Sear the okra for about 1 minute, gently pressing down with tongs.
Cover and steam-roast over low heat for about 2 ½ minutes.
Once browned, flip the okra, cover, and steam-roast over very low heat for another 2 ½ minutes.
In a blender, blend all ingredients for Basil Mint Pesto until smooth. Arrange the okra on a serving dish, drizzle with Basil Mint Pesto, and top with Garnish.
