2 Japanese leeks, white part only, cut into 2” pieces
Kosher salt
1 tablespoon olive oil

Honey Mustard Sauce
1 teaspoon soy sauce
1 teaspoon honey
1 tablespoon whole grain mustard
1 tablespoon unsalted butter
Preheat the pot over medium heat for about 2 minutes. Add olive oil and spread it evenly. Once the oil starts to smoke, place leeks in the pot and sprinkle with salt. Sear for about 1 minute.
Cover and steam-roast over low heat for about 4 minutes.
Once browned, flip the leeks, cover, and steam-roast over very low heat for another 4 minutes.
In a small bowl, combine ingredients for Honey Mustard Sauce and pour it into the pot. Bring to a simmer over medium heat, then coat the leeks. Transfer the leeks to a serving dish and drizzle the remaining sauce over them.
