Ingredients

1 (14-oz) can white beans (Cannellini beans or Navy beans)
⅕ lb pancetta
½ onion, finely chopped
Herbs of your choice (thyme, bay leaf, rosemary, etc.)
1 clove garlic, minced
1 tablespoon, olive oil
Kosher salt, to taste
Freshly ground pepper, to taste


Directions
  1. Add olive oil and garlic to the pot and heat over low heat. Once the garlic becomes fragrant, add pancetta, onion, and herbs. Cover and simmer over low heat for about 10 minutes.

  2. Add white beans, including their liquid, and bring to a boil. Season with salt and pepper to taste, and serve as a side to a meat dish.
