Oven Pot 2.0

Product

Overview

What is the Oven Pot 2.0?

The Oven Pot 2.0 is a new generation of enameled cast iron cookware that redefines the capabilities of traditional cast iron. Featuring Vermicular’s signature precision seal, meticulous structural engineering, and a proprietary enamel coating with instant evaporation technology, this pot was developed with the unwavering goal of being the world's best at enhancing the true flavors of ingredients.

The Oven Pot 2.0 vs. other cast iron pots

The Oven Pot 2.0 sets itself apart from traditional Dutch ovens with its signature precision seal, where the contact area between the lid and pot is hand-machined to fit within a gap of less than 0.01 mm. This incredibly tight seal retains moisture, locks in nutrients, and enhances the pure flavors of each ingredient.

Through meticulous structural engineering, the Oven Pot 2.0 is 20–30% lighter than other enameled cast iron brands. Coated with Vermicular’s proprietary enamel finish featuring instant evaporation technology, the Oven Pot 2.0 not only excels in slow cooking but also performs exceptionally well in fast cooking methods like searing, stir-frying, and steam-roasting, greatly enhancing the versatility of enameled cast iron cookware.

The Oven Pot 2.0 vs. the Musui

The Oven Pot and the Musui are both enameled cast iron pots featuring Vermicular's signature precision seal, designed to enhance the natural flavors of ingredients. The Oven Pot 2.0 has been redesigned with a lightweight structure, making it 30% lighter than the first generation without compromising heat retention. It also features a newly developed enamel finish that instantly removes excess moisture, allowing you to sear and stir-fry like you would with a frying pan. The Oven Pot 2.0 is available in three sizes and eight colors, with two handle options.

The Musui is specifically designed to be used with the Kamado induction stove but can also be used on its own on any stovetops, including in the oven. It is available in one size and three colors.

Compatibility with the Kamado

The 22cm Oven Pot 2.0 can be used with the Kamado induction stove in COOKING mode only.

The Kamado will provide the same precise temperature control with the Oven Pot 2.0 as it does with the Musui. However, since the Oven Pot 2.0 is slightly smaller than the Musui, there is extra space between the pot and the Kamado's inner walls. As a result, you may not achieve the same uniform heat distribution as with the Musui, which is specifically designed for use with the Kamado.

Compatible heat sources

The Oven Pot 2.0 is compatible with all stovetops—gas, electric, and induction—and is oven-safe up to 570ºF.

Variations

Two Handle Options

The Oven Pot 2.0 offers two lid options: the Self-Standing Lid and the Round Knob with Lid Stand.

  • Self-Standing Lid
The enameled cast iron handle allows the lid to stand vertically, saving counter space. The innovative heat-shielding joint keeps the handle from becoming too hot to hold during stovetop use.

  • Round Knob Lid
The round knob features a sleek and minimalistic design. The sturdy cast iron lid stand provides a practical solution for holding the lid upright while cooking.

Choosing the right size

The Oven Pot 2.0 is available in three sizes:

18cm (7.1") This easy-to-handle size is just right for serving 1–2. Whether crafting small batches of soup or baked beans, the 18cm is perfect for cooking appetizers and side dishes.

22cm (8.7") Our standard, all-purpose Oven Pot is perfect for a smaller family of 2–3 and is ideal for everyday cooking needs, whether you're steam-roasting vegetables or making medium batches of soups and braises.

26cm (10.2") Great for cooking for 3–4 people, this size is the sweet spot for most home cooks. Whether roasting a whole chicken, making big batches of soup, or baking homemade country bread, it is large enough to serve a small crowd, but small enough to be used as everyday cookware.

Cooking

Cooking techniques

Combining Vermicular’s signature precision seal with exceptional thermal efficiency, the Oven Pot 2.0 offers unmatched versatility. Here are the cooking techniques you can achieve with the pot:

Steam-roast
Utilizing the Oven Pot 2.0’s precision seal, you can steam and roast vegetables simultaneously. The result is vegetables that are tender on the inside and perfectly caramelized on the outside—flavors and textures unlike anything you’ve experienced before.

Musui “waterless” cooking
Musui translates to "no water." Waterless cooking creates healthy and flavorful dishes without water or additional seasonings. The pot’s precision seal locks in the natural juices of the ingredients, creating a rich, intensified broth purely from them.

Sear & Stir-fry
The newly developed enamel coating with instant evaporation technology, combined with the Oven Pot 2.0’s improved thermal conductivity, allows you to sear and stir-fry just like a frying pan, dramatically enhancing its versatility as an enameled cast iron pot.

Braise & Stew
Enameled cast iron pots are well known for excelling at slow cooking. With the Oven Pot 2.0’s improved heat efficiency, you can easily build flavors by searing ingredients before cooking them low and slow. When braising, use less liquid, as the precision seal retains moisture without diluting the flavors.

Rice cooking
With its superior heat distribution, the Oven Pot 2.0 ensures perfect, fluffy rice every time. The rice grains cook slowly and evenly, absorbing moisture consistently, allowing a deep, rich flavor to develop in every bite.

Baking
With the Oven Pot 2.0’s precision seal, the pot functions as a steam convection oven, creating an environment of optimal steam circulation. This allows you to bake bread that is not only moist and fluffy but also evenly cooked with a perfect crust.

Visit our Recipes page for more ideas.

Never use high heat
Do not use the Oven Pot 2.0 on high heat or preheat it empty over medium heat for more than 7 minutes. Doing so may cause permanent damage to the enamel coating.

If you accidentally heat an empty Oven Pot 2.0 over high heat, never add water to cool it down, as this could cause thermal shock. Instead, allow it to cool to room temperature naturally.

Cleaning & Care

Preventing & removing rust from the rims

Preventing rust
To achieve the precision seal, the contact area between the pot's body and lid is intentionally left uncoated, making it prone to rust. Here are a few tips to minimize rust formation:

  • Always dry the pot immediately after washing. Make sure the rims are dried thoroughly with a dry cloth.

  • Coat the rims with a thin layer of cooking oil, especially before the first few uses.

  • Apply cooking oil on the rims before braising, stewing, or cooking with acidic ingredients such as tomato sauce or vinegar.

  • Apply cooking oil to the rims when storing food inside the pot for an extended period.

Removing rust
In the event that rust appears, you can easily remove it by using mild dish soap on the affected area. If rust persists, you can either:

  • Sprinkle baking soda and scrub gently with a wet sponge.
  • Apply Bar Keeper's Friend Soft Cleanser and scrub gently.

Once the rust is removed, coat the rims with a thin layer of cooking oil to prevent it from developing again.

Watch our Removing Rust video for a visual guide.

Removing burnt food

If excessively high temperatures are used, or there is not enough moisture in the pot, food may burn and leave a residue. To remove burnt food, we recommend cleaning with baking soda.

See here for step-by-step instructions.

Removing discoloration

The Oven Pot 2.0 may develop discoloration when cooking with ingredients high in pigments, such as tomato sauces or certain spices. To clean your pot of any discoloration that may have developed, see here for step-by-step instructions.

Removing white spots

Dark interiors can sometimes develop white spots, which are stains caused by cooking with starchy ingredients, like beans, or from mineral deposits from water. To clean your pot and remove any white spots, refer to the step-by-step instructions here.

Dishwasher use

With proper care, the Oven Pot 2.0 will last for many years. We recommend handwashing with mild soap and a soft sponge, as the enamel coating is easy to clean. However, if you choose to use a dishwasher, please keep the following points in mind:

  • Ensure the pot is not in contact with other kitchenware to avoid damage from potential impact.
  • Use a detergent that does not contain abrasives and bleach.
